I’m SO excited - this picture of mine, taken in France in the summer of 2007, is on the cover of a book published this month! The book is the very latest edition of “French Bed and Breakfast”, one of Alastar Sawday’s Special Places to Stay series. The northern coast of Aquitaine is a bit of a hidden gem, with long stretches of almost deserted beach. The currents can be tricky, and in some places treacherous, but the sea is fantastic to watch. There are only intermittent access points, unless you’re on foot or horseback, and there is no over-developed, fluorescent stuff to be found. It’s a glorious place to wander, dream, and re-balance - and off-season is just as good a time to go, wrapped up well.

I’d never been to the Pyrenees before - what a treat it was! On my second trip for Go Slow France, I flew into Perpignan, hired a car, then drove inland, after an hour or so beginning to climb. It was hard keeping my eyes on the road as the views unfolded, bend after bend. I stayed at 1500m above sea level, in a Gite d’Etape on the coast-to-coast hiking route.

I’m back in France, photographing more lovely places for the new book. Chateau de Rodie was amazing - the ancient castle sits within a working farm, with more animals and birds than I could count, including a number of rare breeds, not least a flock of Landais sheep. Suzanne, below, and her sister (Mole - don’t ask!) get the birds inside every night, safe from foxes. I went with them , and we took  a moment to watch this snowy white bird’s display - unlike the bird on the left. He’d presumably seen it all before.

I last visited Mont St Michel about 30 years ago, and had forgotten how imposing and surprising it is. It’s essentially  a rocky island off the Brittany coast, with the abbey built around its granite apex. Below is the village, built on sand in a fortified enclosure, surrounded by the bay - which has the strongest tides in Europe.

I was in the French Alps last week, on my last trip for the Go Slow France book. I took the opportunity to see some friends in Cordon, and had to get up in the dark to get to the airport in time for my flight home. As I was driving down the mountain, the sun was coming up, and suddenly Mont Blanc appeared through the clouds it had been obscured by for the whole of my visit. Stop, camera, shot - and on to Geneva airport.

I’ve been burning a lot of midnight oil recently, preparing for an exhibition at the Arison Gallery in Chorlton, Manchester, from 3rd November. Deciding, with Paul, the gallery owner, which images to use, then getting them printed to the highest possible quality, has been a slow process, with much deliberation and debate. The final selection is now being mounted and framed. Too late to change my mind now! I’m pretty excited, as you might imagine...  Arison will exhibit a selection of my work - people and places, cityscapes and landscapes, all taken with passion and pleasure.

This horse lives in Aquitaine, by the sea. I photographed him last year for his owner, and have just taken a new print of him to be framed for my exhibition, so that he can look out on Manchester with that thoughtful eye...

I found a huge onion plant in the kitchen garden at Auberge de Concasty in France, and got right down onto the ground to photograph it against the incredibly blue sky. That was before the inn’s owner, Martine, mentioned  that she always wore boots in the garden as there were occasionally snakes around. I’ve had the picture blown up to a metre high and printed onto canvas - it has considerable impact! It’s hanging in my current exhibition at the Arison Gallery and is proving very popular - I’ve taken orders for three copies in the last fortnight.

Tomorrow Alastair Sawday's new book, Go Slow France, is published, for which I made four trips to France last summer...talk about a dream commission! I visited and photographed 21 of the amazing places for the book, which has a foreword by Jean-Christophe Novelli. Go Slow France is the third book in Sawday's hugely successful series, and includes 47 of France's most exquisite châteaux, B&Bs and hotels chosen as places to 'go slow'. Sawday's say: "Fresh writing, beautiful, professional photography and detailed maps to help plan your Slow journey through France.

I stayed in this wonderful place, high in the Auvergne at the end of July on my travels for Sawdays and the new Go Slow France book. Ali and Harry kindly invited me to spend two nights with them and their team, and their two children, to give me time to capture some of the essence of Auberge de Chassignolles.

I've been having a housekeeping week, doing some sorting out of files, labelling them properly  and backing them up carefully, after my recent horror of a crashed disk. Well - I've been trying to! It's so easy to get distracted, such as when I found a collection of pictures I took a few years ago at the vegetable market in Cannes, and found myself going through them and doing some editing and organising. Vegetables can be beautiful, huh? Oh - I see there's some non-veggie oysters there too.

There's a full moon tonight. I have some great memories of full moons, including one over the Taj Mahal - that one still makes me laugh like a drain. It wasn't a romantic evening, believe me! This photograph, though, was taken in France, on the Atlantic coast. It was a hot night in August, and a whole bunch of us, kids and adults, played cricket on the beach till it went dark - or as dark as this gleaming light allowed it to. It was a great evening, and a pretty spectacular sight to see.

I love interesting skies, and storms certainly bring those, in spades. This image comes from a visit to an extraordinary hotel - Hotel Cuq en Terrasses - as part of a book commission. I was outside, just before dinner, photographing the grounds, which are on a sharp incline, when clouds just started to boil up in the sky. The railing in the picture is  the edge of the terrace; tables were set up there for dinner, and a number of guests were enjoying the evening sunshine with drinks, looking out at the wonderful view.

Always nice when some new kit arrives and there's time to have a proper look at it! This weekend it's an upgrade to a black and white post-processing tool, Nik Software's Silver Effex Pro 2. It takes a while to get to grips with something that offers so many new options; but great fun. I was very keen to get my hands on this software as I'm off to Venice next week, hoping for some misty, moody shots that - I hope - will be perfect for black and white treatment.

Burgundy: lush, green, undulating landscape, cattle and vineyards, canals and chateaux. Saturday morning at Beaune market was mellow; meandering among the stalls, poking through the flea market, a bit of street theatre, catching up over coffee under the plane trees. Exhale...

I zipped over on the Dover to Calais ferry, then drove south...I've never been to the Vienne region properly before - have just driven through it to go south. The properties my client wanted me to photograph were about 40 minutes from Poitiers, in an area of France known as "La France Profonde' for it's unspoiled and natural beauty. It was amazing to arrive at the village of Angles sur l'Anglin, which I'd been told was one of the county's most beautiful.
